Revealing the origins of every flavour

Revealing the origins of every flavour

Because we're committed to building regional value

Amidst the challenges of global food production, Algund, a charming village in the Merano region, sets a remarkable standard for absolute regionality in its culinary and hospitality offerings, prioritizing sustainability and local economic vitality. Guided by the ethos 'Revealing the origins of every flavour', local restaurants, farm-to-table establishments, hotels, and accommodations reveal a deep-seated commitment to local agriculture.

Culinary delights through quality, sustainability, and regionality

In the breathtaking alpine-Mediterranean landscape, ranging from 300 to 2,600 meters, Algund flourishes, surrounded by diverse ecosystems. This South Tyrolean village, renowned for its biodiversity, holds culinary artistry in high esteem. Amidst sun-dappled vineyards and traditional orchards, chefs and restaurants champion quality, sustainability, and regionality. Under the banner 'Revealing the origins of every flavour', they passionately feature local products, offering a taste of their terroir.

The Gapphof farm exemplifies this regional focus. "Working with local goods is a passion, not just a trend," the owner asserts. The farm transforms its own bounty - eggs, vegetables and herbs - into exceptional specialties like herbal salts, syrups, and pestos. "My breakfast offerings are strictly seasonal and locally sourced from Algund," she states, reflecting her steadfast commitment.

Sustainable holidays through regionality

We have excellent products in our village and want to actively support the producers," explains the team at Schloss Plars, representing the participating businesses. This principle runs like a common thread through many of the gastronomic offerings. From the Algund dairy to the local butchers and vegetable growers like Töllerhof or DA Genussgarten, to the local bakeries: the value chain stays within the village.

The reasons for this strong commitment to the region are manifold. "Climate protection through short transport routes, the best quality through daily fresh deliveries, and appreciation for the work of our local producers," summarizes the Tschenett family from Gstör, highlighting the advantages. This philosophy is also embraced at Hotel FAYN. Hosts Matthias Kröber and head chef Holger Lübcke emphasize: "Local ingredients reflect the diversity of South Tyrol and make every dish a special experience.

Algund offers journeys into a traditional cultural landscape

The product range extends from dairy products to meat and sausages, baked goods, wines, and distillates. Even in wellness products, hotels like the Wiesenhof rely on regional manufacturers such as Vitalis Dr. Joseph. The company sources the ingredients for its renowned skincare products from local herb farmers.

The concept is extremely well-received by guests. "Our guests greatly appreciate the local and regional products," confirms Irene Theiner from Schloss Plars. This appreciation is shared by the other participating businesses, such as the Pergola and the Wiesenhof with its hotel shop. 80 to 90 percent of their products come from South Tyrol. The "Revealing the origins of every flavour" initiative not only strengthens the local economy but also contributes to the preservation of the traditional cultural landscape. It impressively demonstrates how sustainable tourism and regional value creation can go hand in hand.

Savoring and Discovering Regional Delicacies

The cuisine in Algund thrives on the diversity of the South Tyrolean landscape. Whether it's crisp apples, juicy grapes, fresh vegetables, or aromatic herbs – many of the ingredients come directly from the surrounding area. Farms, farm shops, and wineries supply high-quality products that Algund's chefs refine with creativity and passion.

For all gourmets and connoisseurs, Algund offers not only magnificent dishes but also the opportunity to learn more about the origins of the ingredients. Many restaurants work closely with farm shops and producers, allowing guests to take local products home with them. "For us, it's important not only to use the best ingredients but also to tell the stories behind them," explains Christoph Huber from the Gourmet Restaurant Blaue Traube. "Our guests appreciate knowing that their food comes from a nearby farm," adds Michelin-starred chef Luis Haller from Schlosswirt Forst.

Restaurants that Impress with Flavor and Regionality

From traditional South Tyrolean cuisine to modern interpretations, the restaurants in Algund offer a unique culinary experience. One establishment that focuses on regional ingredients is the Michelin-starred Restaurant Schlosswirt. It's known for its traditional dishes made with local herbs and organic vegetables. The Restaurant Blaue Traube promotes itself with the slogan "Radically Local" at a high level. And the Restaurant Leiter am Waal emphasizes local wines and local meat.

The commitment to local products is not only a tribute to the region but also a contribution to sustainability, as Algund is currently pursuing the GSTC sustainability label. Short transport routes, fair partnerships with producers, and the support of the regional economy are integral parts of this philosophy.
